I know that I abandoned my blog for a good long while. Part of that is that we moved, and life changed a lot. But part of it is that my health has been declining and the doctors haven't been able to help me. You can read more about what I'm doing to help myself here on my other blog. It will explain my decision to start the GAPS diet, and I'll be posting updates to chronicle my progress. And while that's going on, I'll be posting some recipes here.
On the GAPS intro diet, I'm not allowed to have any caffeine. I didn't know how I was going to get through my days without caffeine, because of how exhausted I always am. So I went online and found out that the doctor who created the diet recommends something absolutely amazing for this problem.
Healthy fat, she says, gives us energy and mental clarity. Mixed with the natural sugar in raw, unfiltered honey, it's a powerhouse for getting you through the day. And I will tell you it absolutely works.
Ingredients:
Grass-fed butter
Coconut oil
Raw, unfiltered honey
Before I get to the instructions, let me discuss how important it is to get raw, unfiltered honey from a source you trust. Raw, because pasteurizing honey damages the beneficial properties of the honey. Unfiltered, because the bits of "stuff" that are in honey add to its healing and nutritional benefits. When you take this away, you basically just have sugar. Also, most supermarket honeys aren't actually real honey.
Instructions:
Soften butter. Mix butter and coconut oil in a ratio that tastes good to you. Add 1 part honey for every 4 parts of the butter/oil mixture. My preferred combination is 3 parts butter, 1 part coconut oil, and 1 part honey.
Eat a big spoonful of this when you feel your energy is waning. Store in the refrigerator.
